Hi friends!
Several of you were interested in this breakfast casserole recipe, I stole it from my MIL and it is delicious. I typically assemble it all the night before and cook it in the oven in the morning. It’s super easy and always a hit!
Ingredients
- 12 Eggs
- French bread (I sometimes use whatever I have at home – wheat bread)
- Non-stick spray or butter
- 1 Bell Pepper
- 1 Bunch of Green Onion
- 2 Cups of Cheddar Cheese
- 1 Cup of Milk
- 1 Pound of Breakfast Sausage
- Salt & Pepper
Instructions
- Preheat the oven to 350 degrees. Spray your casserole pan with non-stick spray or coat with butter. Cut French bread into 1 inch pieces and layer it all over the bottom of the pan (If I am being lazy, I just use wheat bread without the crust and don’t cut it into the 1 inch pieces).
- Brown the sausage. Once browned set aside on a paper towel to absorb the grease.
- In a large mixing bowl, mix the eggs, diced bell pepper, diced green onion, cheddar cheese and milk. Once all mixed together, add in the sausage. Pour into the casserole dish over the bread already in the pan. Cover in foil.
- Cook on 350 for 30-45 minutes or until done. It’s tricky to get the eggs cooked all the way in the middle – I typically uncover it for the last 10 minutes and just watch it. I’ve tried raising the temp and it always burns the bottom and sides!
